Brooding, ripe black fruits in the nose. A touch of cherry liqueur, bacon fat and roasted meat with beautiful rose petal and lavender aromas. I get brown spices, clove, vanilla and nutmeg with morello cherry and a hint of Cointreau or triple sec. Such complexity; turbinado sugar, espresso, balsamic, honey baked ham, sandalwood, grape jolly ranchers, truffle, etc., etc. So many descriptors for this wine.

Although it seriously took me nearly 10 minutes to make myself describing the nose, tasting this wine brings another wave of thoughts. This is such beautiful wine, I find myself smiling. Such delicate pretty, floral, impressions that makes me think of white flowers atop a bing cherry chocolate cake. Intensely luxurious, heady, rich, dark fruit, cherry, blackberry and orange compote, smoke, clove, vanilla and red currant. The mouth feel is generous and the finish does not stop. Very impressive wine and I can see now why this is called Sunny Mountain. Must be.

With the girth and structure of this wine, I would put it up against lamb or a prize filet mignon. How about bacon wrapped salmon, prosciutto wrapped anything or grilled meat of any kind. Liver and mushrooms, roast duck, goose, or, did I mention bacon? Regardless, this is definitely a main course wine!

VINIFICATION

The grapes were hand sorted and 100% destemmed. They fermented in individual lots and went through a cold soak for 7-20 days. After racking to barrel, the wines aged for 18 months in 20% New French Oak with a diverse cooperage program: Sylvain, Rousseau, Cadus, Billon, Gillet, Saint Martin and Damy. These barrels have an element of earth to them, with components of minerality and compost which add balance and richness to the wine. This wine was filtered.
